We met up at Bill Schupp Park at 1300 Zinnia in McAllen, Texas on December 18th. It was a perfect morning, not hot and not cold. Everyone shared in setup so it went quickly. We spent about 30 minutes visiting and just catching up.
We got the coals started on it was game on. Homer Serna mixed up a Pumpking Spice cake early so it would have time to cool before icing.
Randy and Sylvia followed up by starting a pre-seasoned chicken to bake. 375 for around 1 hr 15 min.
Homer followed the cake with some mixed vegetables and potatoes.
Randy missed the "before" picture though.
Homer also started the salmon, coated with olive oil and seasoned with salt, pepper, secret ingredients, and dill.
When it all hit the table it looked something like this.
With full bellies and naps on our minds, we cleaned up, loaded up, and headed home.
