Chili Beans

INGREDIENTS

2lb. Ground Chuck (or meat and cut of your choice)

1 15 oz. can diced tomatoes

1 15 oz. can tomato sauce

1 23 oz. can Ranch Style beans

1 med. White Onion chopped

3 cloves Garlic minced

Salt and Pepper to taste

2 pkg. Chili Mix (mild or hot is your choice)

2 cups of water (may need to add more as it simmers to your desired thickness)

In a 12 inch dutch oven over a bed of coals, brown meat until brown.  Drain grease. You can push the meat aside and absorb the grease with a paper towel so that you don't have to remove the meat to do this. Add onion, garlic, salt and pepper.  Continue to heat until onions have become slightly more tender.  Add tomato sauce, diced tomatoes, chili mix, ranch style beans, and water then stir.   Cover and simmer for at least 30 minutes stirring occasionally and adjusting water as needed for your desired consistency

No top heat is needed and you can adjust the coal bed as needed to maintain a simmer.

Makes 10 servings or 5 servings for really hungry folks.

Would probably work just fine in a 10 inch dutch oven also at these quantities but I have not tried it.
