Sausage Jambalaya

Ingredients:

1 1/2 Pounds Smoked Sausage

2 cups raw rice, washed

1 can French onion soup

1/2 stick melted margarine/butter

1 can beef broth (aprox. 14 1/2 oz.

1/2 bell pepper, chopped

1 small onion, chopped

Seasoning of your choice, to taste

Dutch Oven Instructions:

Brown sausage in Dutch Oven, add all other ingredients and cook over a bed of coals to bring to a boil.  After boiling remove some coals but leave enough to maintain a low simmering boil until the rice is almost done.  Remove from coals and allow to sit to allow rice to finish cooking from residual heat.  Serve and enjoy.  Remember to spice to your desired salt, heat, and taste while simmering.  Tony Chachere's is a good cajun style seasoning, salt, pepper, and whatever other seasonings you like.
